Ingredients
- 2 cups orange lentils
- 1/4 cup canned tomatoes
- 1 large onion chopped
- 1 tsp cardamom seeds crushed
- 1 tsp salt
- 1/4 cup vegetable oil
- 1 piece fresh ginger grated
- 2 cloves garlic crushed
- 1 tsp turmeric
- 1 tsp cumin seeds crushed
- 1/2 tsp cayenne pepper
- 1 tsp ground coriander seed
Instructions
- Fill a large saucepan with 4 cups salted water and bring to a boil.
- Add the lentils and cook until soft, then drain and mash.
- Heat oil in a skillet and add the onions and garlic, fry until onions are golden.
- Add the rest of the ingredients and simmer for five minutes then stir in the lentils.
