Traditional Iraqi Dishes & Stews

Iraqi cooking is one of the oldest culinary traditions on earth, rooted in ancient Mesopotamia between the Tigris and Euphrates. Rice and wheat are the staples, and the national dish is masgouf, river fish butterflied and slow-grilled beside an open fire. The everyday table runs to slow-cooked stews, kebabs, stuffed vegetables called dolma, and dates and rosewater in its sweets. It is warm, aromatic food shaped by thousands of years of history.
