    orange lentils

    canned tomatoes

    large onion, chopped

    cardamom seeds, crushed

    vegetable oil

    piece fresh ginger, grated

    cloves garlic, crushed

    turmeric

  • 1 tsp

    cumin seeds, crushed

  • 0.5 tsp

    cayenne pepper

  • 1 tsp

    ground coriander seed

INSTRUCTIONS

    1. Fill a large saucepan with 4 cups salted water and bring to a boil.
    2. Add the lentils and cook until soft, then drain and mash.
    3. Heat oil in a skillet and add the onions and garlic, fry until onions are golden.
    4. Add the rest of the ingredients and simmer for five minutes then stir in the lentils.
    5. Cook until thick.
    6. Serve hot.
