Hearty Sudanese Home Cooking
Sudanese food sits where North and East Africa meet the Arab world, and it tastes of all three. The staple is kisra, a thin fermented sorghum flatbread torn and dipped into rich stews known as mullah, often thickened with dried meat, okra or peanut. Ful medames, slow-cooked fava beans, is the classic breakfast, and the cooking leans on sesame, peanut and warm spice. It is simple, filling, communal food meant to be shared from one dish.
