Spanish Rice

INGREDENTS

  • 1 1/2 cups uncooked white rice
  • 2 tbsp oil
  • 2 cups chicken broth
  • 1 cup chunky salsa
  • 2 tbsp chopped onion

METHOD

Step 1

Heat oil in a large pan over medium heat.

Step 2

Stir in onion, and cook it until tender (for about 5 minutes).

Step 3

Mix rice into the pan with onions, stirring often.

Step 4

When rice starts to get brown, then stir in the chicken broth and salsa.

Step 5

Reduce the heat.

Step 6

Cover and simmer for 20 minutes, until liquid is absorbed.

Step 7

It’s ready to be served.
