Aloo Phujia

INGREDENTS

  • 1 lb. boiled potatoes, peeled and cubed
  • 2 tomatoes, chopped
  • 1 green bell pepper, cubed
  • 1 medium onion, chopped
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp ground turmeric
  • ½ tsp ground cumin
  • 2 Tbsps. Vegetable oil
  • 1 Tbsp. butter

METHOD

Step 1

In a medium pan, heat up the oil and butter then lightly brown the chopped onion.

Step 2

Add the salt, and the spices.

Step 3

Stir in the potatoes and mix to coat.

Step 4

Add the cubed green bell pepper and stir.

Step 5

Cover and cook for 5 minutes on low heat.

Step 6

Uncover and stir in the tomatoes.

Step 7

Cover and cook for another 5 minutes on low heat.

Step 8

Remove from heat and set aside to cool.

Step 9

Place in the fridge for at least 2 hours before serving.

Step 10

Serve and enjoy!
