French Onion Potato Salad
- 2 1/2 cup potatoes cubed and cooked
- 1 cup French onion dip
- 1 cup celery diced
- 2 to 3 eggs hard boiled (mashed or sliced)
- 1 small onion chopped
- 1 tsp sugar
- 2 tsp salt
- 2 tbsp cider vinegar
- Sprinkle salt, sugar and vinegar over the
- warm potatoes and toss lightly.
- Add the onion, celery and eggs.
- Blend carefully in onion dip.
- Let it chill for several hours or overnight to the flavors blend.
- Sprinkle with paprika and serve cold.
