- In a large mixing bowl, sift the flour then add the yeast and the salt.
- Dissolve the sugar in half the water then add it to the flour mixture.
- Gradually add the remaining water while mixing until the dough comes together and is sticky. You may not need to use the whole amount of water.
- Add in the olive oil, and with your hands or your stand mixer, knead it until silky smooth.
- Lightly cover the dough in oil and place into a deep bowl.
- Cover with stretch film and place it in a warm place to ferment for 2 hours.
- Flour your work surface and tip the dough and cut into 12 equal pieces.
- Sprinkle flour on each piece and leave the dough to rest, covered, for 10-15 minutes.
- Preheat the oven and roll each piece into a 6in. circle.
- Add the topping of your choice and bake for 7-10 minutes.
