butter
- In a medium pan, heat up the oil and butter then lightly brown the chopped onion.
- Add the salt, and the spices.
- Stir in the potatoes and mix to coat.
- Add the cubed green bell pepper and stir.
- Cover and cook for 5 minutes on low heat.
- Uncover and stir in the tomatoes.
- Cover and cook for another 5 minutes on low heat.
- Remove from heat and set aside to cool.
- Place in the fridge for at least 2 hours before serving.
- Serve and enjoy!
