INGREDIENTS

  • 2 cups

    cold leftover short grain rice

  • 1 cup

    frozen mixed vegetables (optional)

  • 1

    medium shallot, chopped

  • 3

    stalks green onion, chopped

  • 2

    eggs

  • 1 Tbsp

    garlic ginger mince (optional)

  • Salt and pepper

  • 2 Tbsp

    soy sauce

  • 2 Tbsp

    oil

INSTRUCTIONS

    1. Heat the pan or wok well before adding the oil.
    2. Sauté the shallots until translucent, then add the garlic ginger mince if using.
    3. Add the frozen vegetables, if using, for a couple of minutes until vegetables are soft.
    4. Meanwhile, beat the eggs with a sprinkle of salt and black pepper.
    5. In a separate deep bowl, add the cold leftover rice and pour the beaten eggs over it, turning it gently to coat the rice thoroughly with the eggs. Make sure each grain of rice is well coated.
    6. When the vegetables are soft enough, add the rice/egg mixture and stir constantly, with thin tongs or chopsticks, as the eggs cook.
    7. It will be ready when you see each grain of rice individually and the eggs are completely cooked.
    8. Add the soy sauce and adjust the seasoning to your liking.
    9. Turn off the heat and add a generous heap of green onions before giving your fried rice once last stir.
    10. Serve into bowls and top with more green onions.
