    Lamb’s kidneys, washed and cleaned

  • 1 Tbsp

    Worcester sauce

  • salt and pepper to taste

  • 1 Tbsp

    oil

  • 1 Tbsp

    butter

  • 3

    medium onions, chopped

  • 4

    potatoes, diced

  • 2 Tbsp

    tomato sauce

  • 1 cup

    chicken stock

  • 1 Tbsp

    sherry

INSTRUCTIONS

    1. Sauté the onions until slightly browned.
    2. Add the diced potatoes and stir-fry until golden.
    3. Dice the kidneys and add to the onions and potatoes.
    4. Stir-fry until well cooked.
    5. Add the rest of the ingredients and simmer until the potato is soft.
