- 2 cups sushi or short grain rice
- 2 cups water
- 1 tbsp kosher salt
- 2 tbsps. sugar
- 2 tbsps. rice vinegar
Place the rice into a large mixing bowl and cover with cool water.
Wash the rice in the water, pour off water and repeat twice or more until the water is clear.
Place rice and 2 cups of water into a medium saucepan over high heat.
Leave it uncovered and bring to boil.
Once it starts to boil, cover the saucepan and put over low heat.
Cook for about 15 minutes.
Remove from heat and set aside, covered for about 10 minutes.
Combine the rice vinegar, sugar and salt together in a small bowl and heat in the microwave on high for 30 to 45 seconds.
Place the cooked rice in a large mixing bowl and then add the vinegar mixture to it.
Mix thoroughly to make sure each grain is well coated with the vinegar mixture.
Allow to cool in room temperature before using in Sushi.
