  • 2 cups orange lentils
  • 1/4 cup canned tomatoes
  • 1 large onion, chopped
  • 1 tsp cardamom seeds, crushed
  • 1 tsp salt
  • 1/4 cup vegetable oil
  • 1 piece fresh ginger, grated
  • 2 cloves garlic, crushed
  • 1 tsp turmeric
  • 1 tsp cumin seeds, crushed
  • 1/2 tsp cayenne pepper
  • 1 tsp ground coriander seed

METHOD

Method

Step 1

Fill a large saucepan with 4 cups salted water and bring to a boil.

Step 2

Add the lentils and cook until soft, then drain and mash.

Step 3

Heat oil in a skillet and add the onions and garlic, fry until onions are golden.

Step 4

Add the rest of the ingredients and simmer for five minutes then stir in the lentils.

Step 5

Cook until thick.
